  5. Make ready 3 Stalks Celery, chopped
  6. Take 2 Cloves Garlic, minced
  7. Get 12 cups Chicken Stock
  8. Take 1 Tbsp Poultry Seasoning
  9. Get 1/4 cup Chopped Parsley
  10. Get 3/4 cup White Wine
  11. Get 2 1/2 cups Wide Egg Noodles
  12. Get 1 4”Piece of Fresh Rosemary
  13. Make ready to taste Salt and Pepper,

Cook the veggies until softened, about 5 to 7 minutes. Add the garlic and cook for an additional 30 seconds.
  3. Add the poultry seasoning and cook it stirring constantly for about 10 seconds, add the wine and let it reduce for just a few seconds. Add the roasted chicken to the pot with the veggies, cover with the chicken stock and sprinkle in the parsley, bring to a boil and cover the pot partially and lower the heat to low.
  4. Allow the soup to cook for 3 ½ hours. Remove the chicken onto a plate and let it cool slightly. Meanwhile, with a ladle, skim off as much of the fat as possible from the soup base and discard. Once the chicken is cooled enough to handle, discard the skin and shred all the meat.
  5. Add the meat to the soup base, increase the heat to medium high and bring the soup to a rolling boil. Add the noodles and cook them according to packaged instructions. Taste for seasoning and adjust if necessary.

Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. For the easiest chicken noodle soup, if you have a rotisserie or leftover chicken, instead of adding chicken thighs to the pot, add two to three cups of shredded or diced cooked chicken to the soup at the same time as adding the dried noodles. Homemade Chicken Noodle Soup from Scratch If you have a couple hours, making chicken noodle soup entirely from scratch is the way to go. All you need is a whole chicken (cut into parts), water, celery, onions, and carrots, seasonings, and egg noodles.
