How to Make Quick Chilaquiles

Hey everyone, it is Brad, welcome to my recipe page. Today, we’re going to make a special dish, chilaquiles. One of my favorites food recipes. For mine, I will make it a bit unique. This is gonna smell and look delicious.

Chilaquiles is one of the most popular of current trending foods in the world. It’s simple, it is quick, it tastes yummy. It is enjoyed by millions daily. Chilaquiles is something which I’ve loved my entire life. They’re nice and they look wonderful.

Chilaquiles are basically corn tortilla pieces that are fried, cooked in salsa, and sprinkled with cheese. They are often served for breakfast with eggs and a side of beans or nopalitos. Chilaquiles verdes are made with a salsa made from tomatillos, onions, jalapeños, and cilantro (hence the Chilaquiles are also sometimes confused with migas, which is a more egg-forward Mexican dish. To get started with this recipe, we have to prepare a few ingredients. You can cook chilaquiles using 19 ingredients and 9 steps. Here is how you cook it.

The ingredients needed to make Chilaquiles:
  1. Prepare Sauce
  2. Get 28 oz can of peeled whole tomatoes
  3. Take 8 oz can of diced chilis
  4. Get 5 mushrooms, chopped
  5. Make ready 15 oz can of corn, drained
  6. Get Meat
  7. Make ready 2 lbs chicken
  8. Take 1.5 cups chicken broth
  9. Make ready Adobo seasoning (or seasoning of your choice)
  10. Get Final Dish
  11. Take 1 large onion thinly sliced
  12. Prepare 1 head garlic finely chopped
  13. Make ready Tortilla chips
  14. Take Shredded parmesan cheese
  15. Take Shredded mozerella cheese
  16. Make ready 1 bundle chopped cilantro
  17. Make ready Salt and pepper
  18. Take Olive oil
  19. Prepare (Optional) sour cream

Chilaquiles is a breakfast dish consisting of crispy tortilla chips that are covered in salsa and topped with crumbled As to how spicy the chilaquiles are- that depends on how spicy the cook makes the salsa. Instructions to make Chilaquiles:
  1. (Sauce may be prepped the day before). Combine tomatoes and chilis into blender and blend until almost smooth. In a large container, combine this mixture with corn, chopped mushrooms, and a pinch of the garlic and onions. Set aside.
  2. Note: For the chicken, I used my pressure cooker (set to poultry) and cooked it for 45 min. This way I get even cooked chicken I can easily shred it and get some amazing stock, but you may prep the chicken however you like.
  3. In a pressure/slow cooker, combine chicken, broth, and adobo seasoning and cook. Salt & pepper to taste. After cooking, separate meat from remaining stock. Save stock for later.
  4. The next steps will require you to judge portions based on cookware size and desired portions.
  5. Add oil to skillet. Cook onions until edges are slightly brown. Throw in garlic and cook for 1 min.
  6. Pour sauce mix onto skillet and bring to a simmer. Add saved chicken stock if available (or add original stock). Cook for 5 min, occasionally stirring, until sauce starts to thicken.
  7. Remove from heat and add chicken. Mix and allow to cool for 3-5 min. Note: I learned that allowing the food to cool let the chicken absorb more of the sauce and prevented the tortilla chips from getting too soggy too quickly when added.
  8. Add cheese and tortilla chips and mix, carefully covering all the chips.
  9. Top with cilantro and serve immediately.

Before there were nachos, there were chilaquiles. Tomatoes and spices simmer with any kind of meat to make the ideal topping for tortilla chips. I make Chilaquiles for hangover mornings. But not having made chilaquiles before I followed the recipe faithfully (except for the cheese adding cotija instead of Monterey Jack). This Easy Red Chilaquiles recipe features baked corn tortillas, a red chile sauce and sunny side up eggs.
