I bough a pound of mini bell peppers at Aldi's and they were perfect for these burrito bowls. This vegan burrito bowl recipe is really versatile. Eat it with a fork or scoop it up with tortilla chips.

  16. Get 1 cup Rajma soaked overnight and boiled
  17. Get 4 tbsp spring onion
  18. Prepare 2 tbsp tomato
  19. Take 1 tsp garlic paste
  20. Get 2 tbsp tomato sauce
  21. Get 2 tsp red chilli flakes
  22. Make ready 1 tsp cream
  23. Get Salt
  24. Get 2 tbsp cilantro leaves
  25. Get 1 tsp olive oil
  26. Take Layer 3: Sour cream
  27. Prepare 1 cup curd (thick)
  28. Take 2 tbsp lemon juice
  29. Take 3 tbsp Crushed pepper
  30. Make ready Salt
  31. Get Layer 4: Salsa
  32. Prepare 2 tomatoes chopped
  33. Get 2 tbsp spring onion
  34. Prepare 1 carrot grated
  35. Take Salt
  36. Prepare 0.25 tsp chat masala, Aamchur powder
  37. Prepare 1 green chilli chopped
  38. Make ready Layer 5: Nachos and toppings
  39. Make ready Nachos or tortilla chips crushed
  40. Prepare Tomato + carrot + spring onion Toppings

Steps to make Veg Burrito bowl:
  1. For Rajma: In a pan take olive oil + garlic paste + red chilli flakes and sauté for a minute. Add spring onion + tomato and sauté. Add cooked Rajma + tomato sauce+ salt and cook for 5 minutes. Add cilantro leaves and a tsp of cream and mix well
  2. For Mexican veggie rice: In a pan take olive oil + garlic paste + red chilli flakes and sauté well. Now add spring onion + capsicum + sweet corn and sauté for 3 minutes. Add Chilli sauce + tomato sauce + soya sauce and basmati rice cooked and mix well with salt for 5 minutes. Ensure not to break the rice.
  3. For sour cream : in a bowl take a cup of curd + lemon juice + pepper crushed + salt and mix well
  4. For salsa: mix tomato + onion + carrot + green chilli + chat masala+ Aamchur powder + salt and mix well.
  5. Final plating: Layer 1- Mexican rice, layer 2- Rajma masala, layer 3- sour cream, layer 4: salsa and top with nachos

These baller bowls are gloriously gluten-free and vegetarian. For a vegan burrito bowl, simply use a vegan ranch as your sauce base or swap the dressing for your favorite salsa or hot sauce. For keto diets you can simply skip the rice and you're good to go! Chipotle Veggies - Keeping it simple, but flavorful, Chipotle style fajita veggies are a great addition to your burrito bowl.
